Foodie Friday

Lame, but that was the best I could come up with. I cook all the time now that I SAH, so I think I'll do a recipe post every Friday.

I really like this recipe because I always have the ingredients in my pantry. I just buy some ground turkey and I’m all set!

Easy Turkey Meatballs

·         1 pound ground turkey
·         ¾ cup dry whole wheat bread crumbs
·         1 tbsp dried parsley
·         1 tbsp dried thyme
·         2 tsp dried minced shallots or onion
·         1 tsp garlic powder
·         ¼ cup grated parmesan cheese (plus more for serving)
·         2 eggs

Spay a baking sheet with cooking spray and start broiler on low. Combine all ingredients in a large bowl and form into balls (I usually make 6 large ones) and place on baking sheet. Broil for 10 minutes, turn meatballs, and keep warm in oven at 250. 
Then make 8oz of whole wheat spaghetti according to package directions and heat one jar of your favorite tomato sauce (I like Classico tomato basil) in a large sauce pan. When spaghetti is almost done, transfer the meatballs to the sauce and let them simmer while you drain the spaghetti.
Serve the meatballs and sauce over the spaghetti with more parmesan cheese.
